1. In a small saucepan bring the cream and butter to a boil.

2. Remove the pan from the heat.

3. Add the chocolates and vanilla and stir until the mixture is creamy and smooth.

4. Refrigerate the mixture for about 2 hours until the candy is firm enough to handle easily.

5. Form the mixture into 1 inch balls and then roll in chopped the cashews.

Pick through loose crabmeat with your fingers to insure any pieces of shell are removed. Nothing ruins a great crab dish than finding a sharp piece of shell in it.

Leanest ground beef is ground sirloin and ground round, both at about 11% fat. Ground chuck comes in between 15-20% fat.


1 Cup Plus 2 Tablespoons Whipping Cream

12 Ounces Semisweet Chocolate, cut into chunks
6 Ounces Milk Chocolate, cut into chunks
1 Teaspoon Vanilla
