banana bread

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs, beaten
  • 2 1/3 cups mashed ripe bananas (about 4-5 bananas)
  • 1 teaspoon vanilla extract


  1. Preheat your oven to 350°F (175°C), and grease a 9-inch by 5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  4. Beat in the eggs, one at a time.
  5. Mix in the mashed bananas and vanilla extract.
  6. Add the dry ingredients to the wet ingredients, and mix until just combined.
  7. Pour the batter into the prepared loaf pan, and bake for 1 hour, or until a toothpick inserted into the center of the bread comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
