Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs, beaten
- 2 1/3 cups mashed ripe bananas (about 4-5 bananas)
- 1 teaspoon vanilla extract
Method
- Preheat your oven to 350°F (175°C), and grease a 9-inch by 5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream together the butter and brown sugar until light and fluffy.
- Beat in the eggs, one at a time.
- Mix in the mashed bananas and vanilla extract.
- Add the dry ingredients to the wet ingredients, and mix until just combined.
- Pour the batter into the prepared loaf pan, and bake for 1 hour, or until a toothpick inserted into the center of the bread comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
