Puli Inchi ( Inchi Puli) - recipe
Fry the green chillies and chopped ginger separately till crisp and keep aside.
Keep a pan on the gas stove and add 1 cup of water.
Add tamarind pulp, salt, turmeric powder,
fenugreek (Uluva) powder and chilly powder and boil it without lid for few minutes.
Add the fried ginger, fried green chilly, jaggery cubes and let it simmer until it is thick. Stir it occasionally.
Adjust the tamarind and jaggery according to your taste preference.
For seasoning, heat oil in a small pan, splutter mustard seeds.
Fry the dry red chillies and curry leaves.
Pour over the prepared puli inji.
1. Chopped Ginger- 2 cups
2. Green chilli-3
3. Dry red chilli -2
4. Fenugreek ( Uluva) powder-1/4 tsp
5. Turmeric powder-1/4 tsp
6. Red Chilli powder-1/4 tsp
7. Mustard seeds-1/2 tsp
8. Curry leaves - 1 stem
9. Jaggery- as required
